Like cupcakes, without the cups!



Chocolate bark I made for tonight’s dessert :)
White chocolate layer is filled with salted pretzels and the dark chocolate layer is filled with corn flakes and topped with corn flakes, broken pretzels and sugar paste flowers, hearts & stars.

The mint chocolate torte I just made for tonight’s dessert :) It’s made with a chocolate biscuit base, dense mint chocolate filling topped with a light layer of whipped cream and dark chocolate curls.
For this particular torte I halved the recipe, as it’s just me and my husband having it, otherwise we’ll be eating this for a few weeks - eek!

Homemade potato salad, tuna & devilled eggs
Homemade potato salad: Steamed potatoes, finely chopped onions & mayo (not the low fat stuff, I don’t believe in diets)
plus
Devilled eggs: Hard boiled egg (cooled), cut in half, scoop out yolk into small bowl, add tsp of tuna and half tsp mayo. Mix and add back to hollow in egg.
plus
Half a tin of tuna in sunflower oil.
equals
YUM!
Restrospectively, I now remember I should have added some minced pimiento olives to the devilled eggs and over the tuna.

Spanish Meatballs & French fries* :)
Homemade Spanish meatballs (albondigas) in a mildly spicy tomato sauce on store bought oven French fries (I sometimes cheat) = yummy to the power of infinity! They taste just like the meatballs my abuela (granny) used to make :D
Leftover meatballs make an amazing filling in a baguette. Better than Subway any day!
*Yes, here in the U.K we usually call French fries “chips”, but this variety were called French fries.
